Glazed air fryer salmon bites with caramelized edges

Salmon bites are what happens when you cube a salmon fillet, toss it in a quick honey-garlic glaze, and give it eight minutes in the air fryer: caramelized edges, buttery centers, and a dinner that beats takeout to the table. Because the cubes cook so fast, they don't dry out the way a whole fillet can — which makes this the most forgiving salmon recipe we know. Pile them over rice with a squeeze of lime, tuck them into tacos, or serve them straight off the tray with toothpicks and watch them disappear.

Ingredients

  • 1 1/2 lbs salmon fillet, skin removed, cut into 1-inch cubes
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • Lime wedges and sliced green onion, to serve

Instructions

  1. Pat the salmon cubes dry, then toss with soy sauce, honey, olive oil, garlic, paprika, and pepper. Let sit 5 minutes while the air fryer preheats to 400°F.
  2. Arrange the cubes in a single layer with a little space between each.
  3. Cook 7–8 minutes, shaking the basket once halfway, until the edges are caramelized and the salmon flakes easily.
  4. Serve immediately with lime wedges and green onion.

Ingredient Substitutions

IngredientSubstituteNotes
Salmon Steelhead trout or mahi mahi Same cook time; mahi runs leaner, so watch it closely
Soy sauce Coconut aminos Slightly sweeter and gluten-free
Honey Maple syrup or brown sugar Same amount
Fresh garlic 1/2 tsp garlic powder Add it straight to the marinade

Storage & Reheating

Refrigerate leftovers for up to 2 days — fish is best eaten sooner rather than later.

Reheat gently in the air fryer at 350°F for 2–3 minutes. We don't recommend freezing cooked salmon bites; the texture turns mealy.

Frequently Asked Questions

How do I know when salmon bites are done?
The cubes should flake with gentle pressure and read 130–135°F in the center for a moist medium. They keep cooking for a minute after they come out.
Can I use frozen salmon?
Yes — thaw it fully in the fridge first and pat it very dry, or the glaze slides off and the bites steam instead of caramelize.
Should I remove the skin?
For cubes, yes. Skin only crisps when it lies flat against the basket, and on bites it just goes chewy.
What should I serve with salmon bites?
Steamed rice, a bagged slaw with sesame dressing, or our air fryer frozen french fries for a fish-and-chips night.
