Soup is the most forgiving thing you can cook — and the most rewarding pot to have simmering on a cold afternoon. Two habits make every soup better: sweat your onions, carrots, and celery slowly at the start instead of rushing them, and season in layers — a little salt when the vegetables go in, a little more when the broth goes in, and a final taste right before serving.
Almost everything here freezes beautifully. The exceptions are noted in each recipe's storage section — as a rule, freeze pasta and dairy soups before the noodles or cream go in, and add those fresh when you reheat.
