Instructions
- Heat the oven to 350°F. Sauté the onion and bell pepper in butter until soft; add the chili powder and cumin and stir 1 minute until fragrant.
- Stir in the Ro-Tel, both soups, and sour cream; simmer 2 minutes. Fold in the chicken.
- In a greased 9x13, layer a third of the tortilla pieces, half the chicken mixture, and a cup of cheese. Repeat, then finish with the last tortillas and cheese.
- Bake uncovered 35–40 minutes until bubbling at the edges and golden on top.
- Rest 10 minutes before cutting — it needs the time to set into proper squares.
