Instructions

  1. Heat the oven to 350°F and line two baking sheets with parchment paper.
  2. Blend 1 cup of the freeze-dried strawberries into a fine powder; roughly crush the remaining 1/2 cup.
  3. Whisk the strawberry powder, flour, baking soda, baking powder, and fine salt in a medium bowl.
  4. Beat the butter, granulated sugar, and brown sugar for 2–3 minutes until pale and fluffy.
  5. Beat in the egg and vanilla, then mix in the dry ingredients just until no flour streaks remain.
  6. Fold in the crushed strawberries and white chocolate chips, if using. Chill the dough for 30 minutes.
  7. Scoop 2-tablespoon portions onto the prepared sheets, spacing them 2 inches apart, and flatten each very slightly.
  8. Bake for 10–12 minutes until the edges are set and the centers still look soft.
  9. Sprinkle immediately with flaky salt and cool on the pan for 5 minutes before transferring to a rack.
